2021 Carmenere
The 2021 vintage of Carmenere is so layered and complex. More red fruits pop like pomegranate and Bing cherry, which are then balanced out with the Hoh Rainforest floor on a damp June day. Tons of honey coats your mouth, and again is balanced with savory smoked meats, stone-ground mustard, and dried oregano.
There are so many fun ways to go pairing this wine with your dinner. Braise a lamb leg with pomegranate molasses, dried apricots, preserved lemon, and all the Middle Eastern spices. Or caramelize onions all afternoon to spread over crusty bread and top with melted gruyere. Have a big ol’ glass with your favorite dark chocolate: I recommend Theo’s Chocolate cherry or licorice.
