2017 Cabernet Sauvignon
I love all of our 2017s, it is such a powerful, yet elegant vintage, but this 2017 Cabernet Sauvignon has really gotten to me. I mean, I stuck my nose in there and the first thing I smell is everything bagel – what more do you want? Wait, what’s that I hear – you’d like chocolate? Oh, Ok, sure. This wine smells of dark chocolate. And almonds, but like in an almond and sea salt chocolate bar. And strawberries, dipped in chocolate. And some powdered Swiss Miss in there too.
Yes, there is more to this wine than chocolate and everything spice, we have honey, violet, and a touch of my favorite - oyster brine.
The soft, supple tannins make this a wine to play around with pairings, but my backyard grilled burger with Dijon, pickles, extra sharp cheddar, served with a side of Walla Walla Valley asparagus (which is a must for ever spring meal in the valley) hit the spot.
